Easy Peezy Gluten Free Peanut Butter Cookies

So today I thought I would share with you one of my favourite recipes of all time. Simple, easy, and containing only three ingredients, these gluten free peanut butter cookies are a snap to make and are utterly delicious. 

Easy Peezy Gluten Free Peanut Butter Cookies
1 cup white sugar
1 egg
1 cup smooth peanut butter
Allow peanut butter to soften at room temperature. Lightly beat egg with a fork and add to the peanut butter and sugar. Mix together until dough is consistent. Drop by small spoonfuls onto the baking pan. You do not need to grease the pan because there will be enough oil in the peanut butter.
Bake for 13 minutes at 350°F in the centre of the oven, not near the bottom. When you check to see if the cookies are completely cooked, just look to see if the cookies are slightly browning around the edges. Do not touch the cookies or try to lift them from the pan! You must let the cookies cool on the pan for at least 1 minute or else they will crumble into a sad mess. Once they have cooled, then you can use a spatula to lift them from the pan onto a cooling rack.

Tip: To make cookies that look more uniform, use your hands to roll the dough into small balls before placing them onto the pan. If you look at the pictures below you'll be able to tell which side of the pan I placed some rolled cookies (they're on the right side).

A Fruit Smoothie for the Soul

So yesterday morning I woke up and felt like having lots of fruit. Problem was, I didn't really have time to wash and cut any. So I decided to make a smoothie with some of the frozen mixed berries I had in the freezer and a banana, plus some other things to help in the blending process.
Rushed Frozen Berry Smoothie
1 banana
1 cup of frozen fruit
1 cup of milk (I used skim)
2 spoonfuls of plain yogurt (I used Greek) and
1 spoonful of quinoa seeds
First I put the quinoa, milk, and frozen fruit in to blend them as best as I could, then I added the banana and yogurt to thicken the mixture and add creaminess.

There was enough to fill two large glasses, so I had one for breakfast and packaged the other to take to work and drink with my lunch which was watermelon and a red bell pepper.
Dinner was oh so good! I just love plain salmon that has been baked in the oven with just a little salt on top. Salmon was served with the leaf lettuce and tomatoes I had bought at the farmers market on Saturday, with Italian dressing.
Then it was blue berries for a snack.
Later last night I met up with a friend at a place called Popocha, a really relaxed and cool bubble tea place. The place is always full of young folks from the neighbourhood and stays open until 3am.
I ordered a large Honeydew smoothie with lychee jellies instead of tapioca balls, and my friend ordered a small green apple slushy with mango jelly stars. Mine was sweet and creamy, and hers was like having a super smooth slushy that tasted like pure candy, with more pieces of candy in it!

A Trip to the St. Norbert Farmers' Market

My mother and I have a long history of traveling to the local farmer's market on Saturday mornings. Once summer begins we both get so excited about the fresh veggies and baking we know are waiting for us at the market. I think this excitement has grown ever since we moved and no longer have our own garden in our backyard full of fresh peas, beets, lettuce, and oh so sweet and crunchy carrots.
Yesterday we made the trip over to the St. Norbert farmer's market and were delighted by all the beautiful and organic veggies that were on display.
For those who are interested in going to the St. Norbert farmer's market one saturday morning, it's located at 3514 Pembina highway and runs from 8:00am-3:00pm. Parking. Is. Terrible. So prepare yourself. : )

While the vegetables on their own would make this trip to the market a great experience, it's the baking that makes it extra special! Plus, here at the market you have a chance to talk face to face with the people who have made all these wonderful treats unlike going to the regular grocery store where there's no one to be found.
We were able to pick up some of these freshly made donuts and actually had them for breakfast while we walked around the market. They were soft and glazed on both sides, but without being too sweet. Just wonderful. 
Mmm, sugar cookies. Don't they look beautiful? I didn't get a chance to buy one since I had spotted some fudge near the entrance and had only brought so much money for my sweet tooth. I did, however, overhear the man behind the table explaining that the cookies were preservative free and handmade. And now the fudge! Such soft, sweet, and chocolaty goodness should not exist. I can't remember the name of the place where I got this, but they told me that they'll be moving into The Forks permanently soon. Many of you may have noticed that the fudge place disappeared a little while ago from The Forks. I was so surprised on Canada Day when I went there and there was no place to buy any fudge. Thankfully though, that will change soon. 
Along with the fudge we also bought a Cranberry Orange loaf cake from one of the tables. Sweet, tart, and peppered with orange zest. I wish I had more right now.
The cherrie on top was definitely this bag of peas that my mother bought. Sweet, and the perfect addition to our stir-fry.
I have a feeling I'll be going to the St. Norbert farmers market consistently for the rest of the summer. It's open till 3:00pm which means I can sleep in, it's not too crowded, and there's always new creations to discover every week.

Daily Eats: A Fruit Filled Day

Ah, such a beautiful morning.
It being summer, the markets and grocery stores are bursting at the seams with fresh fruit and veggies. This has left my meals looking fresh and full of colour. Yesterday I was able to photograph everything that I ate and I am excited to share it here on my blog. 
Breakfast consisted of a glass of skim milk, 1 juicy and delicious plum, and a banana. This is a pretty standard breakfast for me.
For lunch it was another glass of skim milk (I usually have two every day), and a fruit salad made by my mother. The fruit salad was made up of fresh blue berries, oranges, frozen strawberry slices, and spartan apples.
And dessert was a bowl of fresh and very sweet watermelon!
Wow, I just can't get over how amazing this watermelon was. I cut half of it up and put it into containers to eat for lunch at work. The other half I've kept un-cut in the fridge to eat at home with a spoon.

My First Post Promises

Dear Readers,

I would like to begin this blog by making a few promises to all of you.

1. I promise to upload a minimum of 1 post every week.

2. I promise to never use slang abbreviations such as “lol”, “wtf”, and “fyi”. Although, I may every once in a while use emoticons. : )

3. I promise that if I do abbreviate something I will explain what it is the first time I mention it in the post. (I once read a bunch of blog posts that mentioned using “evoo”. I thought it was some kind of spice I had never heard of before, but really it was just Extra Virgin Olive Oil. Yeah, I felt really silly after that).

4. I promise to keep my posts full of attractive photos with as little wordiness as possible.

5. I promise to proof-read my posts before uploading them. You're welcome.
