First Try at Waffles

So my Mother bought a waffle maker! Go Mom!
We decided that we would use it on Saturday for the first time. Let's just say it was a great success. The recipe we used was a very simple one we found on the internet and then made a few changes to.
Best Waffle Recipe (Makes 6 waffles)
  • 2 eggs
  • 2 cups all-purpose flour
  • 1 3/4 cups milk
  • 1/2 cup vegetable oil
  • 2 tablespoons white sugar
  • 4 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
Preheat waffle iron. Beat eggs in large bowl with hand beater until fluffy. Beat in flour, milk, vegetable oil, sugar, baking powder, salt and vanilla, just until smooth. Pour 3/4 cup of mix onto hot waffle iron. Cook as per your waffle maker directions until golden brown. Serve hot.
You can keep the batter, covered, in the fridge for up to a week. Just be sure to whisk well before using again. You may also use whole wheat flour for this recipe (which is exactly what we did!).You can add about 1 tsp of brown sugar and 1/2 tsp of cinnamon for a cinnamon and caramel flavour. You can add 1 cup chocolate chips.
Okay, maybe not a great success judging by how many practice waffles we had to make before finally making the perfect waffle.

Just look at that whole wheat goodness. The waffles were crisp on the outside and soft on the inside, just like perfect waffles ought to be.
